Christmas traditions


I decided this evening to make some mincemeat pies. I have incorporated a lot of English Christmas traditions after having grown up in a former British colony. We enjoy, at Christmas, the foods of the English like the fruitcake and the Christmas pudding. I try, whenever possible to make mincemeat pies to remind us of our past lives. There will be trifle too. Here am I, working in a hot kitchen (the furnace is in the kitchen) making sure my pastry remains cold and therefore come out of the oven nice and flaky. It did. After Christmas I'm going to shop for a 'star' cookie cutter so that the tops will be a star instead of this round top. The 'star' will make these pies look more Christmasy.
