I read that they wash the mint, dry it and bend it o fit into the glass. There's mountains of mint for sale everywhere. We decided that we'll plant some mint after we come back. It's been over 2 weeks but we've been too busy at work that we haven't had time to garden. Most houses or riads has a roof top terrace as did this one in Fes. Breakfast in the morning is eaten in the terrace. It usually is orange juice, tea or coffee, local flatbreads, hardboiled eggs, baguette, local butter, quince or fig jam and honey. It's pretty standard everywhere you go in Morroco. This was the morning we ate pretty hearty because a grand taxi is waiting to take us out to the countryside, to moyen (middle) Atlas for the day
